TERROIR AND TASTING: The locality Bungertal is a beautiful sandstone-volcanic terroir located in Nothalten. Its very stony and shallow soil facing due south gives a solar side to the wines, resulting in an exotic and spicy aroma. The richness in trace elements of these volcanic lands gives a strong personality, a wine with a baroque style, complex and expressive. The lamb's lettuce is very present, giving a very marked mouthfeel, with significant salinity giving a tannic sensation on the finish. Salivating. Great length.
HARVEST: 100% manual
VINIFICATION: The grapes are macerated whole for 24 to 48 hours then poured into the pneumatic press, to be gently pressed. Fermentation in old oak pieces using indigenous yeasts. Aging for 10 months on total lees. Bottling at the property without filtration or other additives. Natural wine.
WHEN TO DRINK IT? Will reveal its beautiful salinity and spicy notes while waiting 5 to 15 years.
WINE PAIRING: To be enjoyed with dishes rich in flavors, spicy: Ginger for example. Strong cheeses can echo its spicy character: Munster of course, but also Maroilles or Roquefort.
Also interesting to taste for himself, at the end of a meal, as he has so much to tell.
SERVICE: Drink cool but not iced, around 10 °. Uncork the bottles one hour in advance. If there is a slight release of natural carbon dioxide, wait a few minutes after serving the first glass or decanting. A deposit in the bottle does not affect the quality of the wine.
