Gamay from Gaillac, 8 days of maceration, fermented and aged in tank.
Emile Hérédia (yes, a distant cousin of the famous Lopez de Heredia family of Rioja) established his domaine from inherited vines in 1999. Organic from day one, Emile was fortunate enough to start out with some very old vines, including some 150 years old Pineau d'Aunis. All of the grapes are harvested by hand, vinified, and bottled with no additions (the one exception is his Chenin, which gets a little SO2 at bottling). The wines are light, ethereal, and incredibly fresh.
