Keep it natural, baby.
The vines used are between 5 and 40 years of age, depending on the variety. They grow in the grounds of the winery, which occupy about 35 hectares.
The harvest for Inédito grapes takes place during the second half of September. The harvest is manual and grapes are transported to the winery in small boxes.
The different varieties are vinified separately in small stainless steel vats. Inédito 3/3 grapes undergo a cold maceration lasting about 10 days. Temperature-controlled fermentation is then carried out.
Inédito 3/3 finally rests for nine months in stainless steel vats with its lees and is ultimately bottled without going through any filtering.
Bodegas Lacus, a 15 ha vineyard, was founded by Luis Arnedo, an adventurous young man with a deep respect for the land & the centuries- old traditions of Rioja. He created his first bottling of Inédito 3/3 in ’05. Olivier Riviere, a French man from Cognac who studied winemaking & worked in numerous vineyards throughout his native France before moving to Spain is now consulting for Luis Arnedo. Before ’05, Luis had sold his grapes to a negotiant. Together they have created an easy-drinking & elegant unoaked Rioja with minimal intervention in the vineyards & winery.
