With a carbonic maceration of carignan blended with grenache, the result is bursting with red fruit with a hint of spice and a remarkable suppleness which once again signals the talent of this domain.
Jean-François Nicq, after having worked as a winemaker at the Estézargues cellar in the Gard, in 2002 bought vines in the Pyrenees Orientales in Montesquieu les Albères, not far from the Spanish border and 10 km from the sea. From crime fiction, he changed the name of the estate (today 14 hectares) to Les Foulards Rouges, the title of a novel by Frédéric Fajardie.
Facing due north, on granite soils, the vines are immediately converted to organic, with limited yields (20 hl / ha on average) with the aim of making exclusively natural wines. Major project: five to six years were necessary for the winemaker to understand his terroir and his vines and for the vines in turn to understand what he expected from them.
The grape varieties he cultivates are Grenache, Syrah, Carignan, Grenache Blanc, Muscat and Macabeu. The grapes ripen in the sun, lulled by the song of the cicadas. The wines, vinified without sulfur, only from indigenous yeasts, are juicy, surprisingly fresh (thanks to the exposure to the north), elegant and of great finesse. Real thirsty wines!
Generous, he trained and encouraged some other winegrowers in the region such as the talented Axel Prüfer.
