Born out of the mythical wine growing region the winemaker has taken to calling the Shasta-Cascade (from the Siskiyou Wilderness in the mountains of far Southern Oregon, down through the colliding cascades and Trinity Alps that give rise to the mysterious Mount Shasta). This wine is a love letter to their wineries wild new home in Scott Valley (called iruai by the Shasta People), pioneering a sense of place that channels a vast mineral range, a savage elevation, and a generous beauty. Trousseau brings the blood orange tang, Monduese adds high toned black fruit and a peppery perfume, while the Blaufränkisch rounds things out with a bitter kick and savory structure. It's the wild and mysterious light-bodied red that makes Pinot Noir taste like a Republican. Discerning drinkers choose Shasta-Cascade Red.
Methode Sauvage was started in 2013 by Chad Hinds. They began, striving to find a voice for California Cabernet Franc and Chenin Blanc from all over the state.
In the Spring of 2018 they began planting a vineyard in the California Alps of Siskiyou County, using the permaculture methods laid out by Masanobu Fukuoka. In the spirit of this new project they have begun experimenting with wine styles and varietals from the Alps of Europe.
They seek to make wine with a sense of place by employing no additives, and removing no character. They explore a diverse array of exceptional vineyard sites, with the goal of channeling terroir, and showcasing California's diversity.
