100% Lambrusco de Sorbara! No masks, nothing fake. The purest expression of this red variety that is typical of northeastern Italy, from the province of Modena, in Emilia-Romagna. Of all the producers in the area, who are very familiar with the raw material they work with, there is an exceptional family who are all experts in winemaking with this grape. They are backed by four generations of experience. They are the Cantina Paltrinieri.
In the heart of Sorbara, between the Secchia and Panaro rivers, the winery built in 1926 by Achille (grandfather and first generation of this company) still stands. This is where they make Paltrinieri Lambrusco di Sorbara LaRiserva, a sparkling rosé made using the charmat method.
For this family, Lambrusco di Sorbara is the true treasure of this land. Looking beyond fashion and international varieties, Paltrinieri has managed to overcome the ephemeral winemaking trends, cultivating and always betting on this variety, which they work with every day to get the best out of it. In this case, the Lambrusco di Sorbara grows in the 15 hectares of vineyard on fresh loamy and sandy soils, where organic substances abound. This area is home to the Cristo vineyard, where the Paltrinieri Lambrusco di Sorbara LaRiserva grapes are harvested.
Paltrinieri Lambrusco di Sorbara LaRiserva can be made with about 120 quintals per hectare. Respectful winemaking with minimal intervention is the style they stick to at the Paltrinieri winery. To make Paltrinieri Lambrusco di Sorbara LaRiserva, the pressing is carried out gently, making the most of the free-run juice. This batch, resulting from the first pressings, stands out for being finer, more delicate and of higher quality. Following alcoholic fermentation, where the base wine is made, Paltrinieri Lambrusco di Sorbara LaRiserva is refermented in autoclaves, following the charmat method (also known as Martinotti, in honour of the person who discovered it). Finally, after 10 months on the lees, Paltrinieri Lambrusco di Sorbara LaRiserva is ready for tasting.
