A crisp, fresh, rich in bright acidity red wine with a young character, which will acquire depth and complexity in the coming years. Cabernet Franc grapes are grown in the heart of the Bourgogne commune on an organic vineyard with sand and gravel soils, surrounded by a beautiful wall. Pierre Borel strives for vinification as simple as possible. The skin fermentation takes place in a large stainless steel tank and a fiberglass tank. After a couple of weeks, the wine is removed from the sediment and, without aging in barrels, manually bottled, after which it matures in the cellars of the winery.
Winemaker Pierre Borel owns a monopoly vineyard of 1.5 hectares in the burgay appellation. On this site, surrounded by a wall, dofilloxer vines of the Cabernet Franc variety are grown over a hundred years old. The plot borders on a quiet village on one side and a forest on the other, which means there is no risk of pollution from neighboring producers. The vineyard is officially certified as organic. Pierre does all the work in the vineyard and winery exclusively by hand, including bottle corking. Borel produces only five thousand bottles of incredible quality wine a year. The wines of Pierre are honest, restrained and possessing everything that we love in Cabernet Franc from the Loire Valley.
