The Reversée is made with a technique we call the 'reverse saignée.' We take 1/3 of the grapes, press them to rosé juice and add that back to the tank in order to decrease the concentration and make a lighter, snappier wine.

At Les Lunes/Populis Wine they lease their own vineyards, work their own vines, and built thier own cellar. They're bootstrapping like the pioneering winemakers of California. They do very little in the cellar because they spend time in their vineyards. Proper pruning, precise suckering, well-timed treatments and thoughtful weed management lets us minimize the pesticide inputs in their vineyards. They do this to preserve the indigenous microbes on the grapes and in the soils, which leads to healthier and more complex wines that don't need adjusting or stabilizing. Their goal is to grow wines that pay respect to the great wines of California's past, before money, ego and points got in the way. They’re making wines in a ‘classic’ style that are fresh in their youth, but that have great potential to age as well.
