Thomas-Labaille bottles both white and rosé Sancerre called L'Authentique. All of the vines are on the Kimmeridgian limestone soils of Chavignol and average 25 years old; they are sustainably farmed and harvested by hand. The rosé is a direct-press wine that, like the white, is fermented with native yeasts in fiberglass and cement tanks, aged on its lees in stainless steel tanks for 4-6 months, does not go through malolactic fermentation and is bottled without filtration.
In the early 1950s, Claude Thomas began with a few hectares in the village of Chavignol, thus creating a typical estate, becoming emblematic over the years...
Following his retirement, a second generation takes over. In 1994 his daughter Florence and her husband Jean-Paul Labaille took over the business. The estate grew thanks to the contribution of vines from the family of Jean-Paul from the town of Sury-en-Vaux. Today, the farm extends over 11 hectares located in the villages of Chavignol and Sury-en-Vaux, including some exceptional plots on the slopes of the Monts Damnés.
Jean-Paul and Florence were able to grasp the dynamic linked to Sancerre wine. This is why for the past twenty years the estate has been booming.
Since 2010, new premises located Route de Chavignol welcome you in better conditions and meet the growing needs of the area. A new generation arrives to build on the work of several generations and continue to perpetuate the tradition.
