100% Red Semillon from Kuitpo , southern Adelaide Hills. Having a high yield in 2021, we were able to experiment a little bit more with this. We ended up with batches of whole bunch, destemmed, 50/50%, extended skin contact and 2 ceramic eggs filled with skins. The last 2 stayed on skins for about 250 days!! We brought all the components together about 3 months before bottling, with time to settle in and relax
