HARVEST : Harvested by hand in crates
VINIFICATION : After cold stabilization, a blend of Grenache and Carignan bunches are destemmed and placed at the bottom of a fiberglass or stainless tank, then all the remainder are put on top, whole cluster. Maceration for 10 days. After pressing, Aged in barrels for 6 months. No sulphur added.
The estate of Domaine YoYo is made up of 7 distinct plots, spread out in four hectares, all in the Banyuls Cru of the Roussillon. Their natural production was certified organic in 2008. Their vines of Carignan and Grenache are over 100 years old. Everything on the estate is done by hand, horse or mule (Uma).
